In the heart of Brighton, a bright orange bakery is turning heads and delighting taste buds. Escargot Bakery, the brainchild of master bakers Etienne and Leonard, blends French tradition with Melbourne’s vibrant food scene, offering artisanal pastries with an inventive Australian twist.
Their star creation, the “escargot,” is a snail-shaped pastry as beloved in France as the croissant. Available in sweet varieties like chocolate and cinnamon or savoury options topped with parmesan, chives, and black garlic, it’s a must-try.
“We are very proud of what we have created,” says Etienne, a graduate of France’s National Institute of Baking and Pastries.
“Putting a smile on people’s faces when they bite into our freshly baked escargot is what drives us.”
Another standout is the “Epi,” a whimsical sourdough baguette shaped like a wheat stalk, perfect for sharing. Filled with bacon and cheese, Vegemite, or caramelised onions and jalapenos, it’s a local obsession.
“It’s easy to pull apart and share…locals are getting addicted to it!” laughs Leonard, whose expertise comes from years at Woodfrog Bakery and Bread Club.
Using premium local ingredients like MountZero olives and Lardass butter, Escargot Bakery stays true to French techniques while embracing Australian quality.
“We make the best bread and baked products the traditional way – no shortcuts,” says Etienne.
