Melbourne’s Apollo Inn is raising a glass to spring with a collaboration that brings together three of Australia’s most celebrated venues for one month of Martini magic.
From 3 September to 5 October, Apollo Inn will join forces with Sydney’s Maybe Sammy and Brisbane’s SK Steak & Oyster—two names from the World’s 50 Best lists—to serve up exclusive Grey Goose Mini Martini flights.
Mini cocktails have been having a moment, and these flights prove the trend is here to stay. Guests can sip three inventive takes on the classic Martini, each designed by some of the country’s top bartenders.

“It’s been wonderful to have the opportunity to work alongside our peers from some of the East Coast’s best bars, and to see how each has put their own spin on the most iconic of cocktails – the martini, using a spirit as revered as Grey Goose,” says Apollo Inn Bar Manager Lachlan Bentley.
At Apollo Inn, Bentley’s own creation leans into peak-season mandarins from Mildura, paired with vermouth and Grey Goose vodka.
“Half the size means the Martinis can be twice as cold,” he says. “I love that when you’re on your final sip, the martini will be just as refreshing as when it was first placed down.”
Flights are priced at $45 and include the SK Martini with smoked olive oil, the Maybe Sammy Martini with lemon myrtle and bitters, and Apollo Inn’s mandarin-led version.
Full-size pours are also available, from $26 for Maybe Sammy’s offering through to SK’s indulgent $95 Martini served with caviar and a freshly shucked oyster.
