As Melbourne settles into cooler weather and the city’s trees shift to shades of amber and gold, Fleet rooftop bar has launched a new seasonal cocktail menu inspired by Victoria’s forests, walking trails and regional flavours.
Titled Walk Through the Woods, the immersive menu transforms the CBD rooftop into a cosy autumn escape, pairing panoramic skyline views with warming cocktails crafted using locally sourced spirits and ingredients from across Victoria.


The drinks menu leans heavily into winter comfort, combining smoky whiskies, spiced rum, aged agave and rye with flavours including plum, quince, pear and apple. Notes of cinnamon, chai, ginger, maple and toasted marshmallow are designed to evoke campfires, woodland cabins and cool evenings outdoors.
Fleet Food & Beverage Manager Claire More said the menu was created to bring a taste of regional Victoria into the heart of Melbourne.
“We think the warming flavours of the whisky and chai, topped with a toasted marshmallow finish conjure up winter nights by an open fire under the stars,” More said.

The Plumlett cocktail features two gins from Mitcham’s Dutch Rules Distillery, including Fleet’s bespoke Brim Gin, blended with plum jam, honey and cherry bark vanilla bitters. Elsewhere, the Billy Tea Biscuit combines Macedon Ranges-made Billy Tea Gin with pear liqueur, Biscoff cream and star anise.


One of the standout winter warmers is Camping in the Woods, made using Tasmanian double cask whisky from Hellyers Road Distillery.
Alongside the cocktails, Fleet has introduced an Over the Coals menu featuring Hibachi grilled regional produce including Gippsland lamb cutlets, O’Connor sirloin and charred Werribee pumpkin.
