The Westin Melbourne is taking its much-loved High Cheese experience in a new direction, unveiling a bold new menu that brings together artisanal cheeses, premium produce and unexpected flavour combinations.
Led by Executive Chef Apoorva Kunte in collaboration with Richmond cheesemonger Supercheese and Yarra Valley winery Punt Road Wines, High Cheese has become one of Melbourne’s most talked-about dining experiences, with Friday and Saturday sessions regularly selling out.


A playful twist on traditional high tea, High Cheese celebrates the craft of cheesemaking through a theatrical dining experience that has gained a strong following among food lovers and social media audiences. The latest menu, available from 4 August to 17 October, explores the contrasting elements of fire and water, combining bold spice and warmth with refreshing textures and creamy indulgence.
“This reimagined menu is a more dramatic, sensory-driven progression of High Cheese and has been designed specifically for guests seeking culinary excitement and unexpected flavour combinations,” says Executive Chef Apoorva Kunte.
“We are using heat to awaken and energise the palate, before softening it with elements that cool and refresh. It gives guests who loved the first chapter something new to discover, while still celebrating the indulgence and creativity that makes High Cheese such a success.”


Menu highlights include Aphrodite Barrel Aged Organic Feta Tart with quinoa and avocado, Red Leicester Arancini paired with pear and pepper aioli, Cannoli of Long Paddock Cheese featuring prune, pistachio and black garlic, and Woombye Triple Cream Brie finished with crispy shallots and chilli oil.
The experience concludes with a dessert selection featuring apricot hot sauce, smoked salt and mango, adding another layer of contrast to the indulgent creations.
