Crown Melbourne is preparing to welcome one of the world’s most acclaimed dining brands, with internationally recognised restaurant Mott 32 officially set to open its first Australian venue at Southbank in March 2027.
The arrival of Mott 32 forms part of Crown’s major $200 million redevelopment, which is reshaping the precinct with more than 15 new restaurants, bars and entertainment venues. Alongside the luxury Cantonese restaurant, Crown will also launch a new riverside gastropub later this year as part of the ongoing Riverwalk transformation.

Founded in Hong Kong, Mott 32 has built a global reputation for combining traditional Chinese cooking techniques with contemporary fine dining. The restaurant group now operates in cities including Las Vegas, Singapore, Seoul and Vancouver, earning recognition from the MICHELIN Guide, Asia’s 50 Best Restaurants and the Tatler Dining Guide.
Its Melbourne opening is expected to become one of the city’s most high-profile restaurant launches in recent years.

The menu will feature the restaurant’s signature dishes, including its famous 42-day apple wood roasted Peking duck, known for its crisp skin and theatrical tableside presentation. Diners can also expect handcrafted dim sum, smoked black cod, Iberico pork char siu glazed with mountain honey, premium wagyu and fresh seafood, alongside an extensive drinks program.

Mott 32 Founder Malcolm Wood said Melbourne had long been a target destination for the brand.
“We’ve always positioned Mott 32 to show that Chinese cuisine belongs on the same stage as any cuisine in the world, in the top tiers of the most discerning global cities. Melbourne has been on our wish list for years thanks to its dynamic energy and global outlook. Partnering with Crown to bring this vision to life is a real honour, and we’re extremely excited about the future.”
The redevelopment also includes upgrades to Crown’s entertainment spaces, including the newly rebranded Crown Live theatre, as the precinct continues positioning itself as a major tourism and nightlife destination for Melbourne
