Collingwood restaurant Pincho Disco is diving into the world of Nikkei cuisine later this month, with a one-night-only dinner blending Japanese technique with Latin American flavours.
Taking place on Thursday 28 May, Nikkei Nights will see Colombian head chef Diego Cardenas present a four-course menu inspired by the long-standing culinary connection between Peru and Japan.
The immersive dining event will explore the balance of seafood, citrus, soy, smoke and spice that defines Nikkei cooking, a fusion that emerged through Japanese migration to Peru more than a century ago.

Guests can expect a menu moving between delicate sashimi and rich grilled dishes, beginning with a platter of premium sashimi, market nigiri and maki rolls paired with wakame, tiger’s milk and yuzu-ponzu.
The night continues with slipper lobster anticucho topped with nitsuke sauce and katsuobushi before moving into a main course featuring wagyu striploin with yakiniku sauce, huancaína risotto, apple and mixed leaves.
Dessert leans further into the Japanese-Latin crossover with Japanese cheesecake served alongside lucuma ice cream and miso caramel sauce.

Each course will also be matched with cocktails built around Japanese spirits from House of Suntory, reworked through a Latin American lens. Drinks throughout the evening include a Burnt-Butter & Plum Old Fashioned, a Japanese Slipper-inspired whiskey highball and a Sakura & Jasmine gin cocktail.
A Suntory ambassador will guide diners through the pairings during the experience.
Known for its lively atmosphere and late-night energy, Pincho Disco has quickly become one of Collingwood’s more distinctive dining spots, combining South American influences with music, cocktails and a two-level restaurant-bar setup.
