Crown Melbourne is bringing a taste of Las Vegas nightlife to the city with the announcement of two majornew hospitality venues set to open as part of its ongoing $200 million redevelopment.
Global hospitality group Clique Hospitality will launch Amaya Modern Mexican and Barbershop Cuts & Cocktails at the Southbank precinct in early 2028, adding another layer to Crown’s expanding dining and entertainment offering.
Positioned along the Riverwalk at Crown’s western end, Amaya Modern Mexican is being designed as a high-energy restaurant inspired by the coastal regions of Mexico. The venue will focus on share-style dining, flame-cooked meats, fresh seafood and a cocktail menu centred around tequila and mezcal. DJs and a lively late-night atmosphere are expected to make the restaurant a major nightlife drawcard.
Hidden behind a functioning barbershop, Barbershop Cuts & Cocktails will take a very different approach. The concealed venue channels the feel of a modern speakeasy, complete with live rock n’ roll music, moody interiors and whisky-focused cocktails delivered through premium table service. The concept blends old-school prohibition-era influences with contemporary nightlife culture.
Clique Hospitality CEO and Founder Andy Masi said the new venues are designed to create memorable experiences beyond just food and drinks.

Crown Melbourne CEO Ed Domingo said the additions reflect a broader transformation underway across the precinct, with more than 15 new venues planned over the next 18 months.
