Melbourne’s obsession with chilli oil is heading to a new level this winter, with 1 Hotel Melbourne teaming up with cult favourite Six-Eyed Scorpion for a fiery one night dining experience inside the hotel’s hidden Upstairs Lounge.
Taking place on Thursday 11 June, the latest edition of The Upstairs Pour will centre around bold Southeast Asian flavours, warming cocktails and dishes designed to embrace the colder months without holding back on spice.

The collaboration brings together From Here by Mike‘s Chef de Cuisine, Josh Bosen and Six-Eyed Scorpion co-founder and chef Sandra Seah, who have built a longstanding creative friendship through Melbourne’s hospitality scene. Together, they’ve created a menu that threads the brand’s signature chilli oil through every course, balancing heat with rich, layered flavours.
The menu leans playful and indulgent. There’s shio cured kingfish paired with Meyer lemon ponzu and chilli oil alongside a spicy Six-Eyed Scorpion Martini, while mapo tofu with silken tofu, beef and crispy chilli arrives matched with a tropical lychee colada. Dessert goes all in too, with a dark chocolate tartlet served beside peanut and chilli gelato and an affogato milk punch.


Founded by chef Sandra Seah and designer Jordana Adams, Six-Eyed Scorpion has quietly become one of Melbourne’s cult pantry staples, loved by chefs and home cooks alike for its small batch chilli oils inspired by Southeast Asian flavours and premium Australian ingredients. The brand was even voted Australia’s number one chilli oil in a blind tasting by Gourmet Traveller.
As part of the hotel’s upcoming Pride Month celebrations, the evening will also spotlight the story behind Six-Eyed Scorpion’s queer co-founders and the creative energy behind the brand.
The Upstairs Pour with Six-Eyed Scorpion runs from 6:30pm to 9pm on Thursday 11 June, with guests also taking home a jar of chilli oil at the end of the night. Tickets are available at $85pp here.
