Melbourne favourite La Tortillería has become one of the first businesses in Australia to receive the prestigious Sello M certification, an official recognition awarded to venues preserving authentic Mexican cuisine outside of Mexico.
The Kensington-based eatery is one of only three businesses in Victoria and one of just eight nationwide to receive the honour, marking the first ever Sello M recognitions awarded in Australia.
Uniquely, La Tortillería was recognised for both its restaurant and wholesale tortilla operation, highlighting the business’ long-standing commitment to traditional Mexican cooking techniques and ingredients.
The Sello M accreditation is awarded by Secretaría de Relaciones Exteriores in collaboration with the Academia Mexicana de Gastronomía and is backed by the Mexican government. The program aims to protect Mexican culinary heritage abroad while helping diners identify businesses serving genuine Mexican food.
Founded in 2013 by Gerado Lopez and Diana Hill, La Tortillería has built its reputation around traditional recipes and nixtamalization, the ancient process of preparing corn to make authentic tortillas from scratch.
The eatery quickly became a key part of Melbourne’s growing Mexican food scene, introducing many locals to flavours and techniques rarely seen in Australia at the time. Since then, the business has expanded into wholesale production, supplying tortillas to restaurants and independent retailers across the country.
To receive the Sello M certification, businesses must demonstrate authentic recipes, traditional cooking methods, qualified staff and a genuine understanding of Mexican gastronomy and culture.
“Whether someone is enjoying our tortillas at home or dining with us in the Eatery, our goal has always been the same, to share the same Mexican food I had growing up in Mexico: tasteful, vibrant, and deeply rooted in tradition,” Gerado said.
“The Sello M is incredibly special because it comes from Mexico itself, and it reassures people that what they’re experiencing is real. That connection to flavour, to culture, to tradition, is what matters most to us,” he said.
Over the past 13 years, La Tortillería has served more than half a million diners and now produces over 10 million tortillas annually.
