One of Melbourne’s most unusual dining experiences is arriving this winter, with premium Barossa winery Hentley Farm taking over the historic halls of Pentridge Prison for a one-night-only wine dinner inside the former prison grounds.
Limited to just 45 guests, the Hentley Farm Wine Experience Dinner will unfold across the atmospheric spaces of Olivine wine bar, including the Reflection Garden and the dramatic Long Hall within B Division.
The evening begins at dusk beside open fires in the Reflection Garden, where guests will be welcomed with canapés and Hentley Farm’s new release 2026 Blanc de Noir sparkling white. Alongside the wine tasting, guests will hear from Hentley Farm’s Nicholas Goss, who will share insights into the Barossa estate and its sought-after H-Block wines, before a former Pentridge prison guard offers stories from behind the bluestone walls.
From there, guests move deeper into the historic site for a four-course dining experience curated by Olivine Executive Chef Tom Hoy. The Michelin-trained chef has paired each course with Hentley Farm wines including the 2026 Eden Valley Riesling, Old Legend Grenache, The Beauty and The Beast Shiraz and the coveted H-Block 2017 Shiraz Cabernet.
Menu highlights include octopus carpaccio with roast pepper salsa, smoked salmon, chicken liver parfait with apple gel and almond tuile, and strawberry and pink pepper on brioche.
“This is a rare opportunity – not only to taste the exclusive H-Block range and Hentley Farm’s most iconic and new release wines – but to also have it paired with a bespoke menu created by a Michelin-trained chef, the calibre of Tom Hoy,” said Destination Pentridge General Manager, Christian Price.
