If you’re craving a bowl of noodles after dark, Bowltiful is making a strong case for adding hand-pulled Lanzhou noodles to your late-night Melbourne rotation.
The CBD favourite specialises in noodles made fresh to order, with chefs pulling the dough by hand in full view of diners before adding it to bowls of rich, aromatic beef broth.
Bowltiful follows the traditional Lanzhou principle of Yi Qing, Er Bai, San Hong, Si Lü, Wu Huang, bringing together clear beef broth, white radish, red chilli oil, green garnishes and golden noodles in every bowl.

The broth is prepared fresh each day and simmered for hours before service, creating a deeply savoury base that works particularly well with tender beef or lamb shanks, stir-fried vegetables and authentic sauces.
There’s also a choice of noodle thickness, allowing diners to customise the texture of their bowl. Thinner noodles offer a lighter, bouncier bite, while thicker noodles soak up more of the broth and deliver extra chew.
Founder Charlie Zhang grew up with Lanzhou noodle culture and opened Bowltiful in 2019 with the aim of bringing the traditional style to Melbourne. He personally trains the restaurant’s chefs in the hand-pulling process, with the team drawing on culinary influences from across China, Malaysia and Indonesia.

Bowltiful now has two CBD locations, with both the Elizabeth Street and Swanston Street restaurants open until 2am every day. There are also outposts in Box Hill and Glen Waverley.
The open kitchens make the noodles part of the experience, giving diners a front-row view as each portion is pulled, stretched and prepared to order.
