Australia’s cult dessert brand Brooki Bakehouse is officially Melbourne-bound, with its first Victorian outpost set to open at Chadstone Shopping Centre on Thursday 7 May.
The viral bakery has built a devoted following thanks to its indulgent cookies and theatrical in-store experience, and now it’s bringing that energy south. According to Australian CEO Andrew Head, the move has been a long time coming.
“Melbourne has an incredible foodie culture, and we have had so much demand from our community to go there,” Mr Head told News Corp Australia.
“An opportunity came up with our partners at Chadstone, so naturally we jumped at it. It is time for the brand to meet our audience wherever they are.”
Founded by Brooke Bellamy in 2022, Brooki Bakehouse has quickly grown from a Brisbane favourite into a national and international name, with kiosks and a flagship store in Fortitude Valley, plus locations at Sydney Airport and in the United Arab Emirates.
The Chadstone kiosk will serve up the brand’s signature hot cookies, with customers able to watch the baking process unfold in-store. It’s a format that has already seen queues wrap around the block in Brisbane.
Mr Head said the Melbourne opening is just the beginning.
“We want to replicate all the great things we’ve done in Brisbane and show our supporters in Victoria what that looks like,” he said.
“We also have some further locations coming up in Melbourne as well in the pipeline.”
Founder Ms Bellamy will be on-site from Thursday to Saturday for the launch, giving fans the chance to meet the face behind the brand.
Looking ahead, expansion remains firmly on the agenda.
“The intention is absolutely to continue expanding and to deliver physical stores where our community are, naturally that takes time and any rollout will be considered and in line with our overall strategy,” Mr Head said.
“Certainly we would love to go to all four corners of the globe when the time is right. And showcase some of Australia’s finest dessert products to the world.”
